Mango and Steak Salad with Chili Lime Dressing

I find it difficult to eat a lot of hot dishes in the summer, especially when meat is involved. It just feels too heavy when it’s warm, and especially when it’s humid.

This salad was my way of getting around the heat issue while still enjoying some steak (plus… I needed to eat it before it got freezer burn). The dressing was zesty and light, and the crunchy summer veggies refreshing; the juicy mango added a burst of juice and sweetness to every bite. I also really liked the mix of spices I used to season the steak. It was a bit spicy and worked very well with the salad dressing.

I would definitely make this again!

Roasted Corn Salad

I got 2 pretty ears of corn in my CSA, so I decided to make the most of them and roast the kernels for maximum flavour. Plus, it’s dead easy to do: turn your oven on, and pop the corn in, husks and all, for half an hour. Have you ever heard of easier prep!?

I combined my yummy roasted corn with some roasted cherry tomatoes and barely-steamed yellow beans, also from my food share. I dressed the whole thing with lemon juice and grainy dijon, and the resulting salad was light, sweet, and tangy. I’m so happy I have leftovers!
