Foodie Friend Friday #5: Brandon’s Green Tea Extravaganza

This is the fifth and final installment of my March experiment, Foodie Friend Friday, and I can tell you that we are going out with a bang! If you would like to see what my other friends have been cooking this March, check out the following recipes:

This week, I am featuring my friend Brandon’s cuisine. Brandon is one of the best friends I’ve made during my undergraduate degree. We met three years ago, when we both got hired as orientation coordinators for our university’s orientation week, and we’ve been friends ever since!

One of the defining aspects of our friendship is our deep and undying love for good food. Before Brandon selfishly abandoned me to move back to Toronto, we would get together, cook something delicious (like this yummy chicken), and watch mildly offensive television together. When we weren’t busy being weirdos at home, we would go out to restaurants where we would both get carried away with our meals and rant and rave about them like two food-crazed loonies. Essentially, we were made for one another.

All this is to say that Brandon was a natural choice for me to ask to write up a tasty recipe for my blog. But of course, in true Brandon fashion, I opened my inbox today to not one, but three recipes from the guy. Brandon is not the type to do something halfway, and clearly this was no exception. The great news is that he has put together an amazing themed feast that is sure to wow the lucky people you make this for!

Chicken Breast Stuffed with Black Kale and Feta

I went grocery shopping today and stumbled upon a new and exciting find: black kale. Kale is one of my absolute favourite greens, so I couldn’t believe my discovery! I also couldn’t believe I’d never seen any other variety of kale before… Needless to say, I snatched a bunch up and headed home, my head full of possibilities.

The black kale is more of a deep purple colour, and — as I soon discovered — turns a very dark purply green after it has been cooked. In terms of flavour, it is a bit earthier and sharper than green varieties of kale, but you can still definitely recognize the distinct, bitter fresh flavour that is characteristic of kale.

After carefully considering my options, I combined chopped kale, fresh goat feta, and sundried tomato pesto and stuffed a huge chicken breast full of the mixture before popping it into the oven. I could hardly wait the 45 minutes it took to bake the chicken, I was so excited, but it was well worth the wait!

Chicken Pesto Pasta

Pasta meals are a great way to hit every food group while keeping your meal simple and quick. This particular dish combines whole wheat pasta with chicken, spinach, tomato sauce, and cheese, and is hearty and filling. A hint of basil pesto adds extra dimension and flavour to the sauce.

I put the water on to boil and start cooking the chicken at the same time. By the time the pasta is cooking, the chicken is in the sauce and everything is ready all at once. The whole enterprise takes 20 minutes from beginning to end!

Slow Cooker Southern Style Chicken with Okra, Black Beans, and Rice

My aunt gave me some birthday money back in September that I couldn’t decide what to do with. I knew I wanted something for my teeny tiny student kitchen, but I didn’t quite know what my new toy would be. As my schedule got busier and busier, with a part-time job consuming most of the “free” time I had when school was over and done with, I realized that a slow cooker may be a great fit for my increasingly hectic life. So, in December, I got my hands on my very own crock pot and got busy right away with a yummy recipe from scratch! I hope you like it as much as I did! Chicken Stuffed with Sundried Tomatoes, Cheese, and Fresh Herbs

I think chicken is probably my favourite kind of meat. It is widely recognized as the most versatile meat there is out there, and because I recently reintroduced meat and poultry into my diet, I feel like I’m discovering a whole new world of options and recipes.

I visited my friend Brandon in Toronto a few weeks ago and we whipped up a delicious dinner based on ingredients we found in the fridge: chicken, herbed cream cheese, sundried tomatoes, and fresh basil and sage. We grilled some asparagus and made a salad, and had ourselves a veritable feast!

It was a feast, I tell you! A feast!
