I have been eating lots of quinoa lately! It is a delicious, healthy whole grain, and apparently I can’t get enough of it.
I made this crunchy and colourful salad about 10 days ago and ate it every day for an entire week. There was so much of it! However, it did ensure that I was getting lots of veggies in every day. As a rule, I try to have a lot of variety in my diet. So, even though I ate the salad daily, I was still getting 6-7 different types of vegetables into my body in one sitting. That’s the kind of recipe I like!
I ate it for a week straight and looking at this picture, I'd eat it again now!
If you don’t love a good hearty bowl of soup in the winter… then I am at a loss for words. Soup is hands down my favourite meal when it’s cold outside, and this one is no exception — especially when you come home from a long day at work and the soup is sitting there, a smile on its face, its odour wafting through your home to welcome you back. But you can make this soup with or without a slow cooker! Hearty and chock-full of healthy veggies, I’ll be damned if you don’t go for seconds.
Last summer, my sister and I both experienced a bizarrely sudden and intense craving for Chinese-style dumplings. I had some experience using wonton wrappers, so we concocted our own vegetarian pot stickers and gorged on them.
A few weeks ago, my sister, again struck with dumpling desire, actually went through the trouble of creating a private Facebook event for she and I to make more delicious dumplings. Complete with videos. She wanted them that badly.
Provisions were purchased and we spent the first half of an evening in my kitchen stuffing wontons full of veggies and frying, then steaming them to perfection. The second half we spent rolling around on the couch and floor, stuffed and feeling sorry for ourselves.
